Tuesday is CSA day and I haven't been very good about keeping up with my veggies... when I took a look in my fridge there was a bit of a slimy mess waiting for me. I had to toss out the watercress (and some other cilantro) from delivery #1 and the fava greens were getting close to the end. This week we got some beets (w greens), onions, garlic curls, romaine, carrots, basil and some more daisies. I still haven't gone to the store this week since we were away in delaware all weekend (though tomorrow we might have company), so it was a mix of the veggies from the CSA , pasta and chicken sausage.
This mix is a blend of:
1 lb whole wheat fusilli
2 spicy italian chicken sausage (casing removed)
1 tsp olive oil
2 onions (diced)
2 garlic greens (diced)
1 onion green (diced)
1 can pinto beans (drained and rinsed)
1 can diced tomato (or fresh if you have them!)
1 c fava greens
3 c beet greens
salt & pepper
1 tsp crushed red pepper
1/2 c italian blend cheese 2%
2 tbsp dill
1) cook pasta according to directions
2) in a wok pan, heat up oil and add sausage
3) once browned and crumbled, add onions and garlic to pan and sautee together
4) add the beans and tomatoes - season with salt and pepper
5) once pasta is almost complete, add the greens to the pasta pot - boil for 5 min
6) drain pasta and greens
7) combine all the ingredients together, layering in cheese and seasoning
