5/6/10 - Recycled Fried Rice and Grilled Jumbo Shrimp

Its easy to cook too much rice... it starts out so small but by the time it is ready you have more than enough. Such was the case last night, luckily day old leftover rice is the best base for fried rice! I bulked the rice up by adding plenty of vegetables and some fried egg along with lime ponzu sauce and traditional soy. I served the fried rice with some jumbo grilled shrimp in Teriyaki sauce for a fast, healthy delicious dinner. 



Vegetable Fried Rice
3c day old cooked rice (I used brown basmati)
4 broccoli florets - diced
1/2 red bell pepper - finely diced
1/2 green bell pepper - finely diced
1/2 red onion -finely diced
2 eggs - beaten
2 tbsp Ponzu Lime Kikkoman Sauce  
1 tbsp red sodium soy sauce
2 tbsp olive oil

1) Heat oil in large wok pan, add egg mixture - stir to break up into small pieces
2) Once egg has set - add vegetables and saute until soft
3) Add the rice and stir to combine
4) Add soy and ponzu sauce - allow to heat completely
