Hoboken Sandwich Tour

Hoboken, NJ might now be best known for its cakes as the home of Carlo’s Bakery where “Cake Boss” is filmed. However, it was once famous for the bread bakeries that provided its Italian residents with a fresh loaf each day. In my opinion, if you have fresh bread then you are more than half way to a delicious sandwich! From all of the different bakeries come different loaves, each with its own sandwich following.  And I can't wait to check out all of the different versions of these classic subs.

 My friend Tim has lived in Hoboken for a while now and decided to host this taste test so that we could all try some of Hoboken’s finest. We tried two sandwiches from each shop and rated them from 1 to 5, with 5 being the perfect sandwich - bread, meat and cheese all delicious and in the perfect ratio. Technically, Park & Sixth closed their Hoboken location but because the sandwiches were such favorites we brought takeout from the Jersey City store which is near our apartment .

Tomato Mozz and Basil appetizer

There are a million recipes for this classic Caprese salad. But there is a reason for that, at their best there is nothing more that you need than this perfect bite of fresh mozzarella, tomato and basil. Here in the New York area spring is starting to creep in - I saw my first tree buds and flowers yesterday- but freshly grown tomatoes are still many months away. Luckily, we have been able to maintain our herbs all winter long (well fingers crossed!). I wish that I could take credit for this but my thumb is definitely not green...basic Pothos type plants are really all I can handle. Luckily, my boyfriend is quite good at keeping our little garden alive.


This winter we have shared our basil fresh bites of summer by bringing this dish to a few friends parties - a welcome addition to the usual chips and dips. We dressed them simply with sprinkle of salt and pepper and a swirl of aged balsamic vinegar and good olive oil. Like most others I think I am going a bit spring crazy with the nice temperatures over the weekend.... so here it is my ode to warmer days!

7/24/10 - Another Chopped Caprese Salad

When I saw this salad last summer on Smitten Kitchen's page I knew I would be weak against it. My favorite flavors combined and diced into bite size little cubes for easy consumption? I made a version souped up with some baby arugala and pancetta. This time I kept it simple (and vegetarian friendly) and it still was delicious. The perfect afternoon snack to tide us over from brunch to a late dinner with friend or a great start to a "bruscetta bar" served with garlic bread rounds to entice your guests. 

This easy salad is a combo of fresh mozzarella, drained and rinsed canellini beans, diced fresh tomatoes, fresh basil, diced garlic, salt & pepper, EV olive oil and a small splash of balsamic vinegar.

3/12/10 - Flexetarian stuffed portabello mushroom caps.....with or without chicken sausage

Last week when I was in the store I saw some beautiful portobello mushroom caps. They were HUGE! and I just couldn't resist especially since my vegetarian friend's boyfriend hates mushrooms... I figured we could have a secret girls only mushroom feast!  In the end the boyfriends joined us and I made three variations of a meal with similar ingredients but customized for each of us. She got a vegetarian version - her stuffing was just peppers, shallots, breadcrumbs, pine-nuts and butter. Jeremy and I added some chicken sausage crumbles to the mix and Stephen skipped the mushroom all together and went with whole sausages for the base. (this picture is of mine....so its sausage stuffing...though it looked the same as a veggie version)

This recipe included some new Bertolli Arrabbiata sauce that I received as part of the Food Buzz Feature Publisher Tastemaker program. While I love to make my own sauce I really like the Bertolli products and try to keep some on hand since I usually make a meat sauce and my vegetarian friends don't like that!  (Though a few have debated it though after smelling it simmering for a whole Sunday afternoon)

2/6/10 - Easy Fast Pizza Crust

It seems like everyone has their own definition of great pizza but for me there are only two choices.....either thick dough-y sicilian crust or very thin and crunchy. While my taste encompassed both extreme ends of the pizza spectrum (chicago style however is "too" thick) I recently found a recipe that was the perfect rendition of the thin crust that I love and can't even tell you the last time I have had anything else. I have been making a version of the dough found on 101 cookbooks for a few weeks now and I just can't stop. Unfortunately no matter who writes the instructions I can't toss the dough and end up mixing stretching and rolling. I am a bit lazy though and just sort of mix all the ingredients together and it never really seems to rise too much (just a bit of puffing up) but it tastes perfect and delicious to me. Plus my new hand mixer that has a dough hook attachment means I don't even have to take out my kitchen aid!



Best Pizza Crust
4.5 c AP flour
1.75 tsp salt
1 tsp instant rise yeast (about 1/2 of a packet)
1.5 c very cold water
1/4 c olive oil

1) combine all ingredients and mix together until ball of dough forms
2) cut into 3 pieces and form into balls
3) coat balls in oil and either place in freezer or refrigerate overnight
4) 2 hrs before using remove from refrigerator (or 24 hrs before if frozen)

to cook toss into a round or roll out and top (I used the basics for this particular pre-superbowl trial but this crust can stand up to many toppings!) and bake at 400F for 20 min
